BREAKFAST RECIPES |
GREEN
EGGS AND HAM
1-2 tablespoons of butter or margarine
4 slices of ham
8 eggs
2 tablespoons of milk
1-2 drops of green food coloring
1/4 teaspoon of salt
1/4 teaspoon of pepper
What You'll Need
knife, medium-size mixing bowl, wire whisk
or eggbeater, large frying pan, spatula,
aluminum foil, serving plates.

With an adult's help, melt a teaspoon of
butter in a large frying pan over medium heat.
Add sliced ham and brown until edges are
slightly crisp. Remove the ham from the pan,
cover with aluminum foil, and set aside.

2. In a medium-size mixing bowl, combine the eggs, milk, salt, and pepper. Beat with a whisk until frothy. Then add 1-2 drops of green food coloring until you reach the desired shade of green.
3. With an adult's help, heat a tablespoon of butter or margarine in a large frying pan over medium heat until the butter begins to sizzle. Then add the egg mixture to the pan.
4. Stir the egg mixture with a spatula until the eggs are firm and not too runny.
5. Transfer the eggs to individual plates. Garnish with a sprig of parsley. Add the ham prepared earlier. Serve with toast or warm rolls. Feeds 4 hungry green-egg lovers. |
APPLE
CIDER PANCAKES
2 cups complete pancake mix
1 1/4 cups apple cider
1 tablespoon ground cinnamon
1 teaspoon ground nutmeg
1 tablespoon brown sugar
1/2 teaspoon vanilla extract
1/4 cup chopped walnuts (optional)
butter flavored cooking spray
Place pancake mix into a medium bowl,
and stir in apple cider. Apple cider may be
adjusted to achieve the desired thickness.
Stir in cinnamon, nutmeg, brown sugar
and vanilla. Mix in walnuts if using.
Heat a large skillet over medium heat, and
spray with cooking spray. Use about 1/4
cup of batter per pancake. Cook 3 to 4
pancakes at a time. Turn over when bubbles
appear in the center, and cook until golden
on the other side. Serve immediately with
pats of butter and maple syrup. |
DEATH
BY CHOCOLATE WAFFLES
1 1/3 C. all-purpose flour
1/3 C. whole-wheat flour
1/4 C. unsweetened cocoa
1 T. baking powder
1 t. cinnamon
1/2 C. butter
3 oz. semisweet chocolate
2 T. granulated sugar
2 1/4 C. whole milk
2 eggs, beaten until frothy
Preheat waffle iron. In a large bowl,
sift together the flours, cocoa, baking powder and cinnamon. In a heavy-bottomed saucepan over very low heat, melt butter, chocolate and sugar. Whisk to smooth, remove from heat, then whisk in milk and eggs.
Make a well in dry ingredients, pour in chocolate mixture and blend just until everything is combined. Let batter stand for several minutes. Pour about 1/2 to 3/4 cup batter into very hot waffle iron and bake until waffles are golden and crisp. Serve hot.
Makes 4 waffles.
